Dal Makhani and Rice


Ingredients
1 1/2 cups toor dal, washed and drained
2 tomatoes, medium sized, cut into large pieces
A pinch of turmeric powder
2 tsp coriander leaves, chopped
For seasoning:
1 small onion, chopped
1 tsp red chilli powder
1/2 tsp turmeric powder
1 tsp dhania powder
4-5 green chillies, chopped
1 sprig curry leaves
1 tsp cumin seeds
1 tsp mustard seeds
1/2 stick butter
Salt to taste
Method
Boil the dal and tomatoes with a pinch of turmeric powder and 1 cup water till the dal is soft.Add salt to taste. Set aside.In a saucepan, prepare the seasoning by heating the butter.Add the cumin and mustard. When the cumin is slightly fried, add all the other seasoningingredients except the red chilli, turmeric and dhania.Fry till the onion starts turning color.Now add the powders and fry for a minute.Remove from heat and add the boiled dal/tomato to this.Add the chopped coriander leaves.Mix well.Adjust the salt if necessary.Add 1 cup of water.Bring it to a boil and remove.Serve hot with rotis or plain rice.

Stuffed Paratha/Aloo Paratha


Ingredients

140 gms Flour
1/2 tsp chilli pwd
1/2 lemon
1 tsp dhania jeera pwd
pinch of garam masala
2-3 green chillies

2 medium potatoes
1/2 bunch Coriander leaves
Little melted ghee
Salt accd to taste



Method:Sieve the flour and make a dough with little melted ghee and salt and water.Knead well and keep aside for sometime.Boil the potatoes in salted water.When done remove the skin and mash.Then add the masala,finely chopped chillies,coriander leaves,salt and lemon juice.Divide the dough into 5 equal parts.Roll out each part seperately and place a paratha mixture in the center.Cover up and flatten in between palms.Roll out lightly into a round.Heat a tava and heat the Parathas.add little ghee around the edge and fry till crisp and golden and serve hot.

Mughlai Chicken


Its been a long time since i have posted any of my recipes,been a little busy and a little laziness too.
So friends here i come and share a authentic Moghlai recipe.This recipe can be cooked using either Chicken or Mutton.
Since i cooked with Chicken the heading is Chicken Mughlai.Hope you all enjoy it.
Ingredients:
350 gms of Chicken
1/4 kg Curds
1 big Onion chopped finely
2 Potatoes
1 tsp Garam Masala
Salt accd to taste
Oil for Cooking
There are 2 parts in grinding,Both the masala are suppose to be grinded seprately.
Part 1 grind the following
1 piece of ginger,6-7 flakes of garlic.
The second part for grinding
1tsp Jeera
6 red chillies
6 cloves
6 cardamons
1 stick cinnamon
4 flakes of garlic.
Method
Clean and wash the chicken or mutton and cut in small pieces.Apply the ginger garlic paste to the chicken now apply 1/2 of the second masala and 1/2 of the curds(beat the curds a little) and marinate for 1 hr.Boil the Potatoes.In a vessel add oil and fry the onion till they are light brown,then add the remaining masala and fry for few mins,then add the chicken and salt accd to taste and cook till the chicken is tender.Lastly when the chicken is done add the remaining curds and boiled potatoes and garam masala and serve hot.
